Cocktail Of The Week - Baobab Beetroot Sherbet
Christmas and New Year are over and the New Year’s resolutions will have started. Abstinence from alcohol, losing weight and healthy eating will be high on the resolution list for many.
So where does a cocktail fit into the new year new you plan? We’ve found a fab book called The Healthy Hedonist by Nicole Herft which contains 40 naughty but nourishing cocktails, all of which look and sound absolutely delicious!
We opted to bring you a vibrant, beetroot based cocktail which provides folic acid and fibre and is said to improve stamina, which is great now that the gym visits have increased! Other ingredients provide vitamin A, vitamin C, calcium and iron.
Ingredients (Serves 2)
1 pink grapefruit (peeled)
1 large orange (peeled)
½ Amalfi lemon (peeled)
2 large carrots
80ml citron vodka
10ml agave nectar
2 teaspoons baobab powder (available online or from Holland & Barratt)
Beetroot juice ice cubes
Frozen blueberry skewers (to garnish)
You will also need: electric juicer, cocktail shaker, cocktail stirrer, 2 tall glasses
Put the beetroot, pink grapefruit, orange, lemon and carrots through an electric juicer. Pour half of this into a cocktail shaker along with the agave nectar and baobab powder. Add ice cubes and shake vigorously for 30 seconds to distribute the baobab powder evenly.
Pour the rest of the juice into the shaker and stir well with a cocktail stirrer. Pop the beetroot juice ice cubes into the glasses and using the pourer of the shaker divide the drink between the two glasses, and garnish with the blueberry skewer.
So we may have helped with a couple of resolutions, and as for giving up alcohol, we think this cocktail is equally delicious without the vodka.
